Spoon the Demerara sugar into the bottom of the rocks glass, cover the sugar with 1/3 of the Hennessy cognac (1/2 part), slowly stir.
After approximately 30 seconds add 1 ice cube, continue stirring for another 30 seconds before adding a further third of the Hennessy and an additional ice cube, continue this process till all the Hennessy cognac is added and you have 5 cubes of ice in the glass. Spray a twist of lemon and drop the twist into the glass. Add the apple liqueur and two additional ice cubes and lemon bitters.
Stir before garnishing with a fresh wedge of apple.
