The eaux-de-vie in Fine de Cognac were selected for their floral and fruity aromas as well as their great integrity. After distillation, they are immediately placed in the Hennessy cellars, where they are preserved in ten-year-old oak casks in which three or four generations of eaux-de-vie have already been aged.
The younger eaux-de-vie reveal notes of white grapefruit and orange blossom, adding extra vigor and vitality. The more mature eaux-de-vie are accentuating its delicately structured, round and mellow character.
