3 pieces of Gala apple muddled
1 egg white
3/4 oz of fresh lemon juice
1/2 oz of home made anise & cinnamon syrup
2 oz of Hennessy Very Special

Mix all ingredients
Shake well
Double strain (fine strain) in a chilled martini glass
Garnish with apple & cinnamon

When it comes to bartending, Christophe Beaudoin definitely has a passion for his craft. Working as a bartender for the past two years, Christophe loves the art of mixology, and the freedom to create that his career provides. Since finding himself at Barroco – a busy bar that hosts a mix of tourists and locals – he has also thrived on meeting new people and hearing their stories.

As a bartender, Christophe is inspired by classic cocktails but enjoys putting his own twist on them. Although he didn’t have a lot of experience with cognac initially, he loved the fact that it was easy to pick up and incredible to mix with. He enjoys Hennessy because it is a premium product with great warming characteristics and hints of cinnamon.
