METICULOUS SELECTION

Every day at 11am, the Hennessy Tasting Committee gathers to taste dozens of " eaux-de-vie ", keeping only the ones that meet our most exacting standards of quality.

Every drop of Hennessy V.S.O.P undergoes a rigorous selection process managed by Renaud Fillioux de Gironde, our Hennessy Master Blender. Every morning at 11am, our Hennessy’s Master Blender together with its Tasting Committee sample "eaux-de-vie", keeping only the ones that meet our highest standards to undergo maturation. French for "water of life ", an "eau-de-vie" is the "heart" of a double distillation of wine, made from grapes grown exclusively in the vineyards of Cognac.

The "eaux-de-vie" are placed in French oak barrels to undergo at least four years of maturation to unleash their fullest expression of flavors and colors.

Every new "eau-de-vie" is placed in carefully selected French oak barrels to enable an exchange of flavors and colors over at least four years. Each one will at some point be transferred into different kind of barrels to help it reach its fullest complexity.  As temperature, humidity and lighting affect the taste of an "eau-de-vie", we store the barrels in a cellar that will produce the exceptional palette we are striving for. Having spent over two centuries honing the maturation process, we now possess over 500,000 barrels in 100 cellars.

Our Hennessy Master Blender draws upon over two centuries of expertise to blend the same Hennessy V.S.O.P time and time again.

As each "eau-de-vie" has a unique terroir and distillation, each one will naturally express itself in a distinctive way after maturation. So, drawing upon over two centuries of passion and refinement in the art of blending, our Hennessy Master Blender together with its Tasting Committee blend "eaux-de-vie" of disparate age, notes and nuances to reproduce the same Hennessy V.S.O.P time and time again with the same delightful gustatory and aromatic qualities.

In 1817, James Hennessy created a unique blend for the future King George IV of England. From the encounter of these two visionaries, was born the first Hennessy “Very Superior Old Pale,” know today as Hennessy V.S.O.P.



The savoir-faire of the Maison Hennessy is fully expressed in this balanced cognac: the selection of eaux-de-vie, aging and assemblage. A cognac of remarkable consistency and vitality, Hennessy V.S.O.P conveys all of the savoir-faire of the Hennessy master blenders who have ensured the continued success of this harmonious assemblage for 200 years.
